Some products almost create themselves – others require patience, numerous tests, and a lot of development work. Our freeze-dried kiwiberries definitely fall into the second category. For about a year and a half, we worked together on their development, experimenting, discarding, and improving until we were truly satisfied with the result.
The reason is simple: our kiwiberries consist largely of water. This is precisely what makes freeze-drying a particular challenge. For the organic fruits to retain their natural shape, taste intensely aromatic, and preserve their characteristic color after the drying process, temperature, time, and procedure must be perfectly coordinated.

Why freeze-drying?
Freeze-drying is considered one of the gentlest methods for preserving food. The fruits are first deep-frozen. Then, under vacuum, the frozen water is directly extracted as water vapor – without passing through a liquid state. This process is called sublimation.
The big advantage: taste, color, shape, and many heat-sensitive ingredients are largely preserved. At the same time, the typical crispy texture that makes freeze-dried fruits so special is created. Since only the water is extracted, our kiwiberries still consist of 100% fruit – completely without added sugar, preservatives, or artificial flavors.
Just 15 grams of freeze-dried kiwiberries correspond to approximately 150 grams of fresh fruit. By removing the water, the natural aroma becomes particularly intense, and the fruits can be stored for a long time without needing refrigeration.

We collaborate with Frudist for the production of our freeze-dried kiwiberries. This company from the Osnabrück region specializes in the development and production of high-quality freeze-dried fruits and produces directly in Germany using a proprietary technology. The goal of the process is to largely preserve the natural quality of the fruits while reducing energy consumption compared to classical freeze-drying processes. Originating from research, Frudist continuously develops its technology and has already received multiple awards for it.
Especially with a demanding fruit like the kiwiberry, this expertise was crucial. After numerous test runs and optimizations, we succeeded in achieving a quality that almost perfectly captures the unique taste of fresh kiwiberries.
More than just a snack
Of course, the crispy kiwiberries taste best on their own. But the many ways to use them in the kitchen are just as exciting.
They provide a fruity crunch as a topping on yogurt, Skyr, quark, or muesli, refine smoothie bowls or porridge, and add colorful accents to ice cream, desserts, or fruit salads.
Many possibilities also open up in baking. The berries can be used as decoration for cakes and tarts or lightly crumbled and incorporated into creams, buttercreams, and frostings. Finely ground, they also create a natural fruit powder and an intense flavor for macarons, biscuits, cookies, or homemade chocolate.
For those who enjoy experimenting, kiwiberries can also be used for tea blends, fruit water, cocktails, or mocktails. Even in savory dishes, they provide exciting taste experiences as a fruity-tart contrast on salads or cheese platters.

A small product with a lot of development work
What looks like a simple fruit snack today is the result of about a year and a half of development work. The kiwiberry, with its high water content, presented us with several challenges.
